Ingredients
Serves 4 people
  • 10 ml Lindemans Framboise lambic beer
  • 4 egg yolks
  • 80 g sugar
  • 1 small bowl 125g of fresh raspberries

Preparation 

  1. Crack 4 eggs and separate the yolks, discarding the whites (or, save them to use in our recipe for Brussels Waffles with Lindemans Faro-Lambic). Place the egg yolks in a tall bowl over a double boiler.  
  2. Add the Lindemans Framboise lambic beer and mix in the sugar, combining them with the yolks.
  3. Whisk continuously over medium heat until the mixture becomes light and fluffy, about 6 minutes.
  4. Divide the fresh raspberries into serving bowls and spoon the sabayon over them.
  5. Serve immediately for the best texture and flavour.Â
